This lemon blueberry cake might be my favorite thing to bake, but before I get into any details or bombard you with pictures, here is the info you want directly below. There is nothing worse than having to scroll through 400 paragraphs of bs to get to the ingredients list & instructions 😛

Ingredients

For the cake:

  • 1 1/2 cups blueberries
  • 2 tablespoons of flour
  • 1/3 cup of milk, room temp
  • 3 eggs, room temp
  • 2 tablespoons of fresh lemon juice
  • 2 tablespoons of fresh lemon zest
  • 1 tablespoon of vanilla extract
  • 2 cups of cake flower (different than regular flour)
  • 1 1/2 cups of sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 2 sticks of unsalted butter
  • 2 cups of lemon curd ( use store bought unless you’re an overachiever)

For the frosting:

  • 2 sticks of unsalted butter, softened (this recipe calls for a shit load of butter)
  • 6 cups of powdered sugar
  • 1 lemon, zested
  • 3-4 tablespoons of milk
  • 3-4 tablespoons of lemon juice
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon of salt (not to be confused with a tablespoon or you’ll be cursing and have to start all over like we did)

Nutrition:

Just don’t even look at it. This is not nutritious, it’s delicious.

I definitely am not advanced enough to come up with my own fancy cake recipes and probably will never share an original on here, I just like to share the ingredients list at the top so you can screenshot and add to your grocery list!

One thing I love to do with my kids is bake, especially intricate things that require two things I don’t typically have: time, and patience. All joking aside though, I love learning to bake something new myself and I love watching them take pride in creating something for the whole family to enjoy. It gives them a sense of accomplishment and gives me an opportunity to practice patience. It also gives us a simple way to bond, be silly, and make a mess – their favorite things to do.

I made this recipe on Easter last year for our family and I must say, when I decorated it myself it was V pretty, but this time I let the kids take the lead and it’s totally artistic. The frosting is quite sweet but the lemon balances it out nicely, and the cake overall has a nice refreshing taste. I hope you feel inspired to try it because it is by far one of my favorites!

We were going to share some cake with our sweet friend and photographer, Brianne, however I know there was a lot of tasting going on and I’m also pretty sure I saw some toes touch the cake at one point, so… She politely declined. Anyways, 10/10 recommend her recipe. It will be way prettier if you decorate yourself, but let your kids do it if they want to- don’t be an asshole.
